Veggie slow cook meals

Hello, I'm new to all this and I'm looking for some recipes that I can put in the oven/slow cooker that take a while (I used to put a chicken casserole or stew in the oven, so it was done when I got home with ravenous children after swimming etc)
Any ideas of things that are yummy slow cooked? Or is that more of a meat thing?!

Since I've stopped eating meat I've hardly used the slow cooker. I find almost everything ends up mushy.

Have a look on Pinterest. There are plenty of veggie/vegan slow cooked meals on there.

I make a green lentil bolognese ( basically diced onion, carrot & celery, green lentils, passata/chopped tinned toms and stock/wine/cider) that is good. I tried making Dahl but I much preferred that cooked conventionally on the hob .

I have a feeling that most things would be better not slow cooked. Maybe I should just cook things and just quickly reheat when we get home.
Any suggestions?

I made this in the slow cooker earlier this week and it was great. The butternut squash virtually disappeared but that thickened the sauce beautifully - the chickpeas came out perfectly (not mushy)

All sorts of vegan curries, chillis, stews, soups etc are fab in the slow cooker. Dont need to be left as long (I use a timer plug sometimes to delay it being switched on) and If I'm adding in coconut milk will stir that in right at the end.

One of my favourite is a vegan sausage & bean stew with Linda McCartney sausages, white beans, tomatoes, olives etc.

Slow cooker also brill for cooking dried pulses easily. And I am currently experimenting with a fig, elderberry and lavender jam in the slow cooker!

How long would you put a meal in the slow cooker for? 4h?

I prefer the recipes that you can leave in for 8-10 hours (put on before work, ready when I get home)
