Dipping my toe to veganism. Tried vegetarian at the start of the year and tinned tomatoes seemed to be the base for lots of my meals. I have bad reflux atm which is triggered by the above ingredients and really need some help with ideas please?

Very simple: lentils, stock cube, half a tin of coconut milk, water to cover. Add cumin, coriander, turmeric and curry leaves to taste.

Alternatively, baked beans on toast/in a jacket potato Grin

Falafel, spinach, olives and hummus with roasted pitta breads is a quick easy dinner.
