Rule is that you add one recipe per post, ideally with a web link (or spell it out if it's relatively simple).

Mine is the BBC version of Shepherd's pie: takes a while to assemble, but gloriously tasty!

Good idea for a thread!

I have only actually made this once so far, but it was tasty and really easy to make. My whole family ate it as well, so I would definitely make it again:

I used coconut oil instead of groundnut and full fat coconut milk instead of reduced fat.

Oh brilliant - great thread! Following with interest. Mine is lentil bolognese: takes 30 minutes and it's awesome with baked potatoes - had it tonight with oodles of habanero Tabasco!

2 x chopped celery
2 x grated carrots
2 x chopped garlic cloves
1 x chopped onion

  • FRY -

1 x tin chopped tomatoes
1 x cup red lentils
Tomato paste
350ml verge stock

  • SIMMER 20m -

Very Quick Vegan Roasted Mediterranean tarts

Ingredients -
Vegan spread e.g. pure
Puff pastry (jus roll)
Bag of frozen roasted Mediterranean Veg (e.g. From Tesco or Waitrose freezer section)
Jar of Caramelised red onion or tomato purée
(Baking tray)

Instructions -
Preheat oven to 200/220 ish
Grease baking tray/s
Unroll pastry and divide into 6 squares
Spoon the red onion or tomato purée on the middle of each square leaving a space between the edge
Top with the frozen veg
Put into oven until it looks ready

Serve with salad

Ok, not real cooking but is so easy for a quick dinner and you can freeze the left overs or stick them in fridge for next days lunch
