First Night ALONE with DH in 9 years, need good hotel in Herts area

Its our anniversary in Aug and we have managed to talk my mum into having our girls for the weekend. We dont want to be further than 1 hour away from home in Herts. Need nice quiet hotel, pool if possible, meals included for 2 night. Would like somewhere in the country if possible.
Anyone got any recommendations?

The Grove in Watford? Not really in the countryside but lovely hotel with Spa and good restaurants

The Swan Hotel in Bibury is about 1 and a quarter hours from Sopwell House in Herts - both are lovely and tranquil. x
