self-catering for 5 in August, with hot tub/indoor pool, under £500/week - any hope?

Any area, doesn't need to be near the sea, but preferably not a caravan as the dcs say they are already scarred for life.

I would be amazed if you could find any accommodation in August at that price - £1k would be nearer the mark.

I booked a week in Pembrokeshire for £610 in August, it has indoor leisure facilities. Website is scolton.com.

We sometimes go to a watermill in Somerset through www.helpfulholidays.co.ukwith a pool shared with one other property but two years ago it was £1250 for the week. I think you'll have to adjust your pricing expectations! It would be cheaper if you don't have a private pool.
