Hi, i used to work for Great North Eastern Railways. Yes you can stop over. The only ticket that allows this is the normal buy on day ticket which between London and Edinburgh will cost around £150 ish. You can break the journey on this ticket but i wont go into all the terms and conditions on here. Basically tou pay for the flexibility, it is always cheaper to specify your train.

The best way to do it is to buy for eg Edinburgh to Newcastle single ( buy in advance as far ahead as possible and specify the exacy date and time could cost around £10). Then a ticket from Newcastle to London again on a specified train.
