Special/interesting family breaks for overnight stay in UK

I have a big birthday coming up and am looking to book a trip or two away with my DH and 2 kids (teen/tween) to celebrate. Any good places that we might enjoy? We are looking for more than a night in a hotel, we'd love to stay somewhere with something a bit extra. For example, we loved our stay at Port Lympne safari park a few years ago. We've done Center Parcs to death. Any ideas for a fun stay in the UK? We are south-east England, so not too far from there ideally.

To be honest personally prefer jumping on easyJet/ryanair for a wkend city break in Europe

If you have the budget for port lympne I’d definitely recommend jumping on a flight to Bucharest & going to therme spa, it’s amazing

I'd book a few nights in London - theatre tickets, a good meal, maybe an exhibition or you could do the Harry Potter studios, perhaps?

We did Warwick castle and was fantastic. We did glamping in their bell tents which was such a great experience and the setting is lovely. Or they have the lodges or hotel. Then you get the day trip at Warwick castle either the day you arrive or afterwards. Throughout the year they have 2nd day free which is nice.
