Relaxing, luxurious and accessible UK break in September?

I can't get travel insurance at the moment as I'm recovering from an illness and awaiting more tests. My ability to walk far is limited, especially uphill.

DH and I are desperate for a holiday and he needs a break more than I do because he's doing so much for me.

Where would you suggest? We need:

Relaxation, excellent quality beds/decor and great service.

Appealing, healthy food (I need to stick to a Mediterranean type diet).

Self catering or hotel is fine - if a hotel, then a room with a fridge as we find eating out 3 X a day a bit much and usually have breakfast or lunch as a room picnic.

Ideally with a pool.

Sea view would be perfect but otherwise just somewhere beautiful where we can chill out.

Flat and pleasant walks in the area - we'll be driving there.

We live in South Wales and could either go somewhere here in Wales or further afield.

Thank you hive minds!

Fistral Beach Hotel and Spa in Cornwall would tick those boxes

Thank you!

Drat! I've just read the reviews for Fistral Beach and they're not great. I'm looking for excellent service and good food - it comes up short on both of those counts.
Such a shame - the location is excellent and the views look amazing.

Any other suggestions out there please?

That looks perfect. It would be a 5 hour journey from where we are but we could make it a road trip and break it up there and back, thanks.

Friends of mine have been to The Grove Hotel in Narbeth and raved about it

Watergate Bay hotel on the outskirts of Newquay.
Celtic Manor in Wales

We've been there twice before! It's stunning, and Narbeth itself is lovely too. The only downside is that there's no spa or pool. Worth thinking about though.

Thank you - we live quite close to Celtic Manor so wouldn't go there.
Watergate Bay has a stunning setting, will look into that.

The Grand in St Annes. Doesn’t have self catering but ticks all the other boxes.

Bedruthan is great, pool, treatments, lovely food, in house bakery, spacious rooms, sea views. I've been about 6 times. It's an easy relaxing lovely stay with amazing sunsets! (And little fridges in the rooms).
