Recommendations for nice (5*) hotels north of England/Borders

I’m looking for somewhere to go for a couple of nights. North of England/Borders. Ideally not Yorkshire or the Lake District.

I want 5*, nice restaurants, pool (spa possibly).

I seem to be going round in circles and still haven’t booked anything after two weeks of browsing. Nothing is standing out.

Maybe look at Headlam Hall near Barnard Castle?

I love Seaham Hall too. Linden Hall is bottom of list for hotels we've stayed in. Beadnell Towers, in Beadnell is really lovely.

I've not stayed at Beadnell Towers but we ate there last week and it was excellent.

Matfen Hall is lovely
