Bank holiday weekend - couples break recommendations

DD's dad is having her for this bank holiday, Saturday evening to Monday lunch, which leaves me and DP child free for 2 nights! We are based in the midlands and looking for a 2 night getaway in the uk, we're into scenery but more 'sit in a bar and look at it' than walk around it. Happy to travel a few hours. Somewhere with some nice bars, good food, attractions etc.

Suggestions welcome!

The Varsity Hotel in Cambridge has a rooftop bar with great views. Plenty of excellent food options in Cambridge and enough to do for a couple of days.

Look up Cotswold lakes, great scenery lovely villages nearby, some shopping in the town if needed and you can do lake activities.

Buxton, lovely options for pubs and restaurants, stay at the crescent hotel if you can run to it, it's lovely. Recommend the French restaurant for dinner, be sure to book.

Cheddar isn't a bad suggestion but it's usually heaving, and very expensive for the area, seriously marked up though nice ice cream! My local is great to sit and drink with views of boats if you're into ales or gins? In good weather the windmill in Portishead has amazing views

Isle of Wight. Ferry from Southampton or Portsmouth. The Royal Hotel in Ventnor is a beautiful couples place.
