UK city break hotel with pool recommendations

Can anyone recommend a hotel in or very near a city or town centre with plenty of restaurants, pubs etc?
Fairly flexible on location within a couple of hours of either Birmingham or Bristol.
The budget isn't huge! Any recommendations would be very gratefully received 👍

Bold street is full of great food places all in one location, Lark Lane near Sefton Park is a short ride away or the Baltic Market is a great up and coming food area, loads to choose from.
Hotels with a Pool I haven't a clue but you can go open water swimming in the Dock or a power boat ride canoeing etc? The Powerboat tour of the Dock was fantastic, very informative and if you are up for it the driver will take you to part of the dock with no speed limit and run the boat flat out, it was great.
