2 of us looking for nice spa type place with nice walks and food, somewhere bottom end of Scotland or north end of England, any recommendations

Look at Buxton perhaps

Lakeside Hotel at Newby Bridge in the Lake District

If you are have the $$ to do a cheap spa holiday in Europe for a short break I would recommend Budapest.
