Nice village/town in mid/southern England recommendations

The moment we look like we're allowed to go away, the first thing I want to do is book a few days away.

We'd both want to village/small town in the south or Midlands, either by the sea or with nice surrounding countryside for walks. 2/3+ pubs/restaurants and a few shops would be good. If it's got character great, but can work around that element if there's sea or nice countryside.

Bolton on the the Water is very pretty. Usually rammed with tourists, so might be a good time to go.

Chipping Norton, Cotswold town tons to do on the doorstep. Lovely pubs and restaurants.
