Special weekend away in UK- HELP

Looking for recommendations for a nice hotel or spa break for a weekend in May to celebrate wedding anniversary/big birthday weekend without the dc. We will have from Thursday or Friday until Sunday. Got to be in Newcastle for 1pm Sunday so ideally not any more than 4 hours away. Any recommendations? The hotel we wanted is fully booked. Good food a must.

Rudding Park is amazing but pretty expensive. Wood Hall is slightly more reasonable. I’d also recommend The Devonshire Arms.

I’d go to a nice hotel in Edinburgh and book dinner at the Kitchin.
