Fresh air 1 hour-ish from London?

I wonder if anyone can recommend somewhere for a weekend break - I'm really craving some fresh air. I have looked online but felt overwhelmed and uninspired, any tips for a cottage etc, or just a nice area, would be really appreciated.
We are 2 adults, a 4yo and a 5month old, will drive, looking for somewhere self-catering where when you stick your head outside the air smells like the countryside!
