Best hotel Midlands / near A1 or east coast mainline for weekend with best girlfriend?

I'm planning a weekend away with my lovely friend. We'd like a comfortable hotel preferably with a pool. Good restaurant in the hotel or within a short walk is a must. She has some health problems meaning that doing anything too physical is tricky.

Ideally we'd like to spend the day doing something together then chill in the hotel. Some spa stuff would be tricky with treatment she's on but a potential. Otherwise nothing to physical (see above). We like gin and good food, plus open for trying something silly and different so on this one I'd be open to any and all suggestions.

Re budget, it's a special occasion so would push the boat out for the right place/ activity, but we'd prefer comfortable and reasonable over luxury and super expensive.

If this was you where would you go?

The Marriott at York has a spa. For something silly if going between now & end of Jan get tickets for the pantomime at the theatre royal. It's a bit different for adults as much as children. Think it will be amazing this year as the dame is bowing out after literally decades.

Stamford? The George or William Cecil both lovely. Or the crown. Neither have a spa but lots of spa type places in town.

Wroxall Abbey is amazing. It's very near Birmingham, about 20 minutes from Cadbury world and even closer to Warwick castle. It has a fine dining restaurant as well as a less formal bar and lounge menu. In the summer you can also eat on the terrace.
