Where to go for 5 night holiday with no DC in school holidays

Dh and I unfortunately have to holiday at the start of the school holidays this year. We would like to go to Cornwall but am guessing it will be very busy so am looking for alternatives in the South West of England or Wales. We are looking for a seafront hotel ideally or one with estuary views. A spa hotel would be lovely as we would like a bit of R and R. We do like walking though so some nice walks nearby would be great also walking distance to a town with pubs and restaurants. Onsite parking is a must. Does anyone have any recommendations please?
Budget is £1000

The Royal Glen in Sidmouth is a charming family run hotel with lovely sea views. Nothing is too much for the staff. There is an indoor heated pool, treatment room and gym. The treatments are available to book. It's less than a 10 minute walk to the town centre. www.visitsidmouth.co.uk/shopping-in-sidmouth-town/eating-out Connaught Gardens are a 5-minute walk away. Exmouth is a 25-minute drive from the hotel.

I've just check at the Royal Glen has one double left for the very end of July that is under your budget.

Thanks Rice, that looks really nice. I am off to research the area. Anyone with any other recommendations?
