Ideas for a weekend in Edinburgh please?

We're off to Edinburgh to see the Tattoo August Bank Holiday weekend, me, DH, DD 11 and DS8.
Apart from the tattoo on the Saturday night we have no other plans, can anyone recommend a couple of nice (but not uber posh) places to eat and ideas of what we can do on the Sunday and Monday morning?
I'd like to climb Arthur's seat if the weather is good, is there anything to see at Leith? I think there maybe the castle and some dungeons worth exploring?
All ideas would be gratefully received thanks.

The camera obscura and world of illusions is well worth a visit, as is the zoo.

The Elephant House café is great, such a nice change from all of the usual chains.

The Edinburgh Festival is on throughout August so there will be loads to see and do.
Take a wander up the Royal Mile and watch the street performers, browse the German market, book tickets to a show-there are so many to choose from in all genres, or just take a chance on a free performance. It's a great time to visit the city, enjoy!
