Best option to stop in London for 5-7 days

I was thinking of a self catering apartment, central London, but prices are around £700-1000 which, while within budget, I'm wondering if it's the best option. There would be me, DH and three DC.

Ive seen. A decently priced on in Vauxhall, but unsure of the area. On a map it's near the London Eye.

Have you tried air bnb? Lots of people I know in London rent their houses out
