Nice hotel en route from Pembroke to Cornwall

Looking to break this journey with a night at a nice hotel. Travelling with DH and a 3yr old DS. Any suggestions?

Celtic Manor at Newport is nice - with spa and lots of restaurants. Can be expensive but you can get good deals if you are booking in advance. Its also just off the motorway.

Lots of nice hotels in Bristol.
