I'm sure someone will come with the name... Really nice Spanish in the road parallel with Rose Street.

Cafe Andaluz on George St (parallel to Princes st and Rose St) is great. They do a bargain lunch tapas menu which the DCs love. Also, I know you said not chain, but Wagamama on Lothian Road is also good - well ours love love love it.

Also Valvona and Crolla behind Harvey Nicks always goes down well. The cafes in the National Museum, and Modern One are popular too.

The Water of Leith cafe if you are down that way.

That's the one! Really fab food - lovely staff, nice atmosphere, good wine list (what's there not to like?).

Long time since we were there and was pre-dc's but, La Partenope on Dalry Road was always good with kids. Most Italians are I find.

Or Bar Roma off Queensferry Street at the west end.
