Hi! We have a 1 year old baby and would like to go away somewhere in the south of the UK this summer. Does anyone have any good suggestions? Ideally, we'd like to stay somewhere where our 1 year old baby boy would take an interest in, or have activities he could take part in.

Depends where you're starting from. I would limit driving time to 2 hours max. Then go for beach (doesn't need to be sea, think lake if nec). Otherwise, DS will probably get most out of your un iterrupted company, so go somehere you want. It will only get harder as he gets older and starts having definite interests!

ISle of Wight is very family friendly, plenty of beaches and other attractions to catch DC's attention.
