We will be there for a few days and after weve done the usual Train Museum, boat trip, Castle Museum etc... just thinking about driving "somewhere" - are there any parks, or a theme park etc...

Flamingoland is a themepark not far away. There's also Eden Camp, a WW2 place nearby, or Dalby forest for outdoorsy stuff. There's a steam railway at Pickering that goes to Whitby, or you can go and see the Heartbeat village at Goathland. Or take a trip to the coast - Bridlington, Scarborough and Filey are about an hour's drive and nice old-fashioned seaside places.
