We need somewhere to stay and would really appreciate some ideas of what to do/where to vist etc. Many thanks.

visit the Royal Pavilion - crazy, over-the-top decorations, audio guides for kids and adults.

then go to the free Brighton Museum next to it for plenty of things that are fun for kids to see.

trip on Volks Railway if you visit in summer - when will you be going?

Brighton is such a nice place to go when it's sunny but not quite summer (too crowded!) Definitely take a walk along the pier and walk along the sea front (Hove direction). Few little shops down by the beach. Walk through the Lanes too- nothing like it anywhere else. You'll find some really nice eating places there too.
