What do you have for lunch?

Sorry, being nosy and looking for ideas!

I teach secondary and our lunch is only 30 minutes but because we collect P5 classes from line up, the warning bell goes a few minutes before that. I'm a long way from the yard so I set off then. So, realistically, I probably have 27 minutes of lunch time.

2 days a week, I have lunch duty so eat on my feet those days.

I fell into a habit of buying lunch in school last half term but the choices are a bit limited and I would rather take my own.

I find sandwiches get a bit boring (maybe I'm doing it wrong 😂) and heating anything up is tricky because of time and only one microwave on our floor.

So, I need things that are easy/quick to eat and possibly can be eaten on duty.

What are your go to lunches? Hoping for some inspiration 🙂

Ottolenghi style salads, but with fewer ingredients. Make a few and use them together over several days.

Soup in a Thermos pot.

I tend to have whatever is leftover or in the cupboards Monday, then food shop Monday night for salads (chuck whatever you fancy in) and have the same salad for the rest of the week, but different salads each week if that makes sense! Easy to prep Monday night for the week, and I just chuck the leaves on the morning of. Can eat from the tub with a fork on the go. Or sometimes I'll have soup and flatbread or a wrap or leftovers if I have time to microwave and sit down. I think having decent and varied lunches at school does require some planning and prep but is worth it so you don't end up in the canteen every day.

For example last week I had a salad with pomegranate seeds, pepper, cucumber, leaves, couscous, hummus, chicken. One week I might have Caesar. Or mozzarella and tomatoes with balsamic dressing. Or feta and pomegranate seeds and cucumber and leaves. Salads can be more varied and filling than some might think!

I have a school lunch, usually...Our lunch break is 50 minutes and I usually manage to pop to the canteen during lunchtime or while I'm on PPA (and then on duty at lunch). Staff lunches are subsidised, though. I'm at an independent a school, so food tends to be ok. We get a main course, salad bar and a pudding.
