I’m planning to make Luke Windebank’s Rosemary chicken and Butternut squash that Smilesy and ArcaneWirless mentioned on another thread this week. It was featured in the show. I’ll report back.

I watched the Hampton Court episode on YouTube. I actually visited Hampton Court but before they installed the kitchen garden. It has 2 gardeners and a lot of volunteers to take care of an acre. They produce not only the food for the cafe but also run a farm stand. I am REALLY impressed!

I can heartily recommend the butternut squash recipe. I like it that much, it will be a go to quick meal - even without the chicken.

I am now determined to have at least two bnsquash in at any given time. The other ingredients are always in. I’m having it again tomorrow night with some burrata that needs using.

Oven 190.

The bit I did. Big fat cubes of butternut squash. Few sprigs of thyme, garlic (whole- 3/4 cloves) tossed in olive oil. Roasted for 25-30 minutes. My oven - not fan and slow. He said 20-25 minutes but don’t know what his oven was. Uncovered.

Chop spring onion and a wee bit chilli. Wilt spinach and mix it through with the roasted bn squash. Wee bit chopped chive to serve. Decent squeeze of lime juice.

Simple and fresh. Bob of sour cream/creme fraiche. We only had Greek gog which was also lovely.

Perfection. Cheers to Luke. 🥂

Chicken bit

Dress chicken with lemon and rosemary olive oil. Bit of seasoning on skin. Cook in pan skin side down first. Season meat side. Flip it when your skin is bonny and crispy. Pop a bit of parchment over it while finishing to keep moisture and heat in.

Rest your chicken. He wilted his spinach in the same pan.

Will look for butternut squash. May roast it with white beans and replace the chili with Aleppo pepper flakes.
