I had a cat that had a digestive illness which ment that she would poop multiple times a day. If she had already used the litter tray and I hadn‘t removed it (when I was at work), she would poop outside the litter tray. What worked for her were puppy training pads - she would always poop on them and I could simply pick them up and put the in the garbage outside. They can be bought in packages with 10 pads but I bought packages with 100 pads from Amazon.
i hope it works for you. Otherwise I would suggest another litter tray and possibly one without a hood.

Is he ok otherwise? Could it be a health issue? I’d also get another litter tray, one that doesn’t have high sides so can easily in and out.

How many litter trays do you have down for him? Are they easy for him to get in/out of?
