Ragdoll colouring genetics

I'm getting my first ragdoll soon and have fallen down an absolute fluff-hole of cat colour/pattern genetics! I'm wondering if someone might know a lot more than I do and be able to explain. FWIW, I'm not overly fussed on what we end up with but I've found it fascinating!
So dad is a blue bi-colour and mum is a blue point. The kittens are blue bi-colour and blue mitted. Where have the mitted come from? I found this chart which indicates a bi-colour X point should produce bi-colours and points. So according to this, is the dad likely to be a mid high white? If so, what exactly does that mean and how can I tell?

The chart just shows gene combinations, but does not account for possible gene linkage and whether genes are dominant or recessive.
From looking at the chart and my knowledge of genetics it looks like there might be more than just two genes involved.
