Cat poo in garden

I have three cats, two prefer the indoor litter trays but one much prefers to go outside. We have four indoor litter trays (1 per cat +1). I've been out into the garden today to start tidying up ready for spring and there is cat poo everywhere! In the grass, all the borders. I've cleaned it all up. How do I encourage my cat to go either indoors in the litter tray or in a specific spot that's easier to keep clean? Or should I put a litter tray outdoors? I've got young children and they won't be able to play out if she keeps pooing everywhere. I'm confident it's my cat as there aren't many cats round here. I'm glad it's in my garden and not the neighbours but would just like to encourage her to go in a certain spot if possible. Advice much appreciated!

I've added an outdoor litter tray, a covered sealed box variety with flap. Works great for us.

Are you sure what is in the garden was done by your cats?

As sure as I can be. My husband and the kids say they see her doing it in the main spots where I found it.

Cats love to dig so you could always try an outdoor sandpit or something that's just for the cat to use. Pop some of her poo in there when you find it so she understands what it's for.
