Elderly adopted cat has started pooping on the floor!

Okay so we've had our 13yo sprightly rescue cat for 6 months now. Her previous owner was in her nineties with dementia and often forgot to feed her so she now lives with us. She seems super happy here, settled in right away, fully litter trained house cat.

The last 3 days she has pooped on the floor in the baby's room. Baby is 3 months so not yet in there. Cat has never seemed to have any problems with baby and we all cuddle together in bed at night. So why?!?

Reasons I can think of:-

  1. Baby room is currently a giant mess of Christmas presents, clothes etc that we're clearing out - maybe that's stressing the cat out?
  2. Cat hates baby - seems unlikely but maybe?
  3. Cat is stressed because we're busy people and often out of the house. While I was on maternity pre-baby I was in a lot, but now we often go out for a couple of hours a day.

Help please! And how can I combat this? Our house is TINY (4 rooms) but maybe putting a second litter tray in baby's room could help.

Shut the door!
How many litter trays?
What sort of litter?
Are they high sided? She may not be able to climb in and out.
