How long does it take for microchip scabs to heal?

Has been over a week.

We still have a bit of scabbiness (especially on my bunny).

Is this okay?

Pretty fast I would think, like normal wounds. (I've never checked them but they're just large injections.)

Are they healthy looking scabs or inflamed and crusty?

It sounds OK then - remember that they inject the chips in a place that animals can't normally/easily groom so scabs wouldn't be licked off quickly as they likely would elsewhere.

If you're still concerned in a day or two, give the vet a quick buzz and check with them.
