Our two cats are 18mths old, and for the last year have been 'toileting' (hate that word!) in the garden/outdoors. On very rare occasions, one of them poos in the bath (thunderstorms, chased by another cat).
DD1 arrived 6 weeks ago, and since then both cats have started using the bath as their litter tray. They obviously feel stressed/upset, although are behaving normally in all other respects, and don't seem bothered by the baby (apart from bath issue). One just wees in it every so often; the other one poos and wees in it once a day, every 5 days or so (it's not constant).
Any advice on how to stop this?

Close the bathroom door. Put a litter tray by the bathroom door.

we use feliway when our cat got stressed and widdled mostly in the bath but also on a leather pouffe quite a bit too. you can get plug in diffuser or spray but both work!
Maybe do what op says and plug one in next new litter tray?
