Does it matter that my cats love the combined food pellets that we give out pet rats and the wheatgerm pellets that we give the fish when it's cold?

because they love them!

If anyone leaves the lid off they sit there crunching them like a packet of pringles

DH reckons it's because they can't get at the rats or the fish so this is simply cutting out the middle man.

Clearly we don't encourage this but will it hurt if they find the odd dropped bit of food?

Our cat loves the rat pellets too!
So does the rabbit but not sure if thats to spite the cat
Doesn't seem to have caused any problems other than we have to keep the rat food out of cats reach
