Is £3K about right?

Also, it's been 6 years since we had a Yorkie.

Nothing about dog prices is "right" at the moment unfortunately.

You need to look less at price and more about the quality of the pups, are they are a puppy farm? Have they just slung two dogs together who look vaguely like Yorkies to make some quick cash on the ridiculousness of puppy prices right now?

Many good KC accredited breeders have NOT bred during the pandemic, horrified by the enormous increase in demand from people very likely not in it for the long haul. A good breeder doesn't want to have their puppies handed back to them, or resold online, or handed in to a rescue.

Just be wary of anyone who is advertising a whole litter online. Good breeders will have had waiting lists - some already have 2 year long waiting lists. A good breeder will have done all the relevant health tests (not checks, tests, which cost money), will have KC registered them, will be proud to show you all the paperwork and ask you lots of questions in return.

There's a lot more "greeders" and scammers out there than good breeders at the moment.

We were on a KC breeders list, and when we eventually got our dog the breeder just went by KC guidelines and charged us 650. That was pre-covid though. I'd just email some recommended breeders and ask them to consider you for any future litters.
Never rush into it.
