I think I missed a while series or something. How did Gabby and Carlos end up with 2 girls when they couldnt have children??

This series skipped 5 years.

They thought they couldn't after Gabby's miscarriage but turns out they could.

what happened to the baby the maid was carying?

it turned out not to be Carlos' I think (mix up at the clinic) so the maid kept it.

I may have misremembered this.
