A friend who is renowned for getting the wrong end of the stick and believing urban myths and gospel truth was telling us about whatching something on TV that involved injecting bolognaise sauce into a partially-formed chicken egg ( so the shell was still soft...or something) to cook in that...
can anyone translate this into "what really happened" ?
PLease?

there was a thing on tv last week and I can't remember what it was but people somewhere were eating duck eggs with duck foetuses in them - sorry not to be more specific...no sign of bolognaise in it. The eggs are sort of sipped first then eaten - eeew

He was regaling us with this story on new years eve...if that's any help to anyone?

Sounds like Heston Blumenthal; I've got the book, but can't see anything immediately.

But, oddly enough, I was looking up the recipe for Bolognese in Elizabeth David the other day (after years of cooking from Hugh FW's, I thought I'd give someone else a chance) and she says something about putting the half-formed eggs from the chicken (presumably found in the chickens you kill to roast) into sauce to cook. I think that was in bolognese, but I might have got distracted and been looking at someone else.

I will go and check...

Yes, I did not hallucinate this, it is what she wrote. They are called ovarine.

sounds hopeful vonsudenfed( if a little yuk)... we were wondering about the sustainability of killing all your chickens in order to harvest half -formed eggs....?!

Hi did do this, I saw it too. I think it was the Bolognese episode, I can't remember his reasoning now though.
