It's true that Curtis has been acting besotted with Amy. On that date when they danced at the end (!), he was so over the top, he could've got down on one knee and I wouldn't have been surprised!
As Tom alluded to, about Michael and Amber, there must be a lot edited out to make relationships seem stronger so as to surprise us, the viewers at a later date.
