Backpack with lots of pockets and compartments

I'm slowly getting used to life with two DC (3 and 4 months) and am realising that I desperately need a bigger, better organised backpack. I do have a Herschel backpack for work but it's basically just one big void with a laptop compartment. I need pockets and zips, lots of them. Inside and out. And outside space for a water bottle or even better, two. Space isn't the main issue, it's organisation. Not too fussed about it looking stylish tbh but I would prefer not too look like I'm about to embark on a hike.

I looked at Roka, which seems to get recommended frequently on here but they don't really have compartments on the inside. I looked at Eastpak, because that's what I used to have as a student, and the Pinnacle looks good compartment-wise but no water bottle holder on the outside. Osprey also gets mentioned a lot but I actually felt overwhelmed looking at all the choices on their website. They seem more geared at outdoor sports people but I might be wrong.

Does anyone have any recommendations?

Have you looked at Mia Tui? They do lots of different bags, including rucksacks, and are great at internal compartments.

These may be too sporty but I like the pockets (on the 32ltr especially.... which may be too big for your needs).
