There is a thread from about 7 years asking if they’re worth the money and they seemed to be but I walk my dog on the beach and want to know if they’ll be ok for shallow paddling / a bit of sea spray?

Yes - definitely worth the money.. and yes will be fine with sea spray.. totally waterproof. Though you will need to maintain them and regularly clean and spray them with waterproofing spray.

Yes fine. My original dubarries lasted nigh on 15 years of yachting, walking etc.

Ive had the toggi canyon boots for 7 years. Look similar and I've used them for snow (bought for a Jan Iceland trip), hiking, dog walking etc. Never leaked, warmer and comfier than wellies and not so expensive I'm worried about trashing them.
