Why does my hair turn to shit once the dye has washed out?

So I last had my hair coloured (salon colour, brown) about 3 weeks ago. My hair looked & felt great after, the condition felt much improved. It was like this for about a week, then gradually as the colour began to fade, my hair has gone back to the ‘course, rough, ‘pre-menopausal’ shit it is. There’s still some colour there. I wash my hair about 3 times a week max, using colour safe shampoo & conditioner. I only straighten about 2-3 times. Even using permanent dyes, they eventually fade

Product wise, hairdresser advise to use as less as possible, even said no heat protection before straightening. So I’ve just been using a heat protection before blow drying. Where as before I use to apply a serum when wet & heat protection before straightening.

I don’t want to be colouring my hair every 3, 4 weeks. If my hair is dry, which it is a bit, how come the dyes are washing out so quickly, I thought the more porous your hair is, the more your hair soaks up the colour.
