What's my fail safe plan to a safe tan?

I've got the type of skin that tends to freckle and burn if I don't protect it.

I'm going to Spain in 3 weeks, so I need to prepare.

OK :
I've got -exfoliant (L'Occitane)
I've waxed and epilated (and I can do this again before I go)

I've got EcoTan Tan Accelerator Gel that I can use every night
UltraSun (one a day Application) in Factor 20,30 and 50 (for whole family)

Ultrasun Aftersun to moisturise.
Ultrasun LipSalve
Phillip Kingsley 'Swimcap' to protect my hair in sun and pool/sea

So my main aim is not to burn.
I can get a bit of colour if I'm careful with protection and exposure.

So if I use the Accelerator, in theory my skin should be sun responsive and the tanning process start straight away
Do I need to exfoliate daily/every 2 days while I'm away

If I use Johnsons 'Holiday Skin' before I go, will it look cack ? Or should I use it there as a moisturiser?

TIA -any tips?
