Meat or Quorn lasagna made with celery carrots onions peppers and layers of courgette, done with potato peeler, under the lasagna sheets. I use fat free Greek yogurt with eggs and loads of mustard instead of cheese sauce. Makes a dinner, two lunches and a freezer portion backup dinner.

I like buddah bowl type meals- I usually put in roast sweet potatoes, black beans, red lentils, a huge salad with lots of tomatoes, beetroot, celery, cucumber etc and maybe some tofu. I like having lots of different things to pick at and you can make lots of variations.

I also love a deconstructed sushi bowl - sticky rice, tofu, shredded carrot, cucumber, spring onion and pepper and some crispy kale. Usually just about 1.5 for the rice I use and then add any syns for any sauces.

we have tacos a lot too but use lettuce leaves as wraps and I love this. We have black beans, tofu, rice, we make mango or pineapple salsa with cucumber, tomatoes, coriander, lime and spring onions. Sometimes I also make spicy potatoes and have refried beans with them too. Very tasty, colourful and surprisingly filling. I’ll sometimes have a tortilla wrap but don’t miss them to be honest as I’m all about the fillings!

I also batch cook lentil and bean chilli so can have with rice, jacket spud or stuff peppers with it.

the sticky chicken one was very easy and quick.

I've also cooked roast chicken (dont eat the skin) and chilli/spag bol/shepherds pie and used oil spray and 5% fat beef mince. using normal recipes.

Chicken nuggets went well - husband preferred them to the normal recipe.

Hunters chicken, chips and salad- to make the hunters chicken nicer I use Aldi BBQ sauce only 1 syn tablespoon and it’s enough for 1 chicken breast, add in 30g cheese, use the precut chips from Tesco fresh aisle cook them in airfryer and a salad- 1 syn evening meal and it’s lovely x

Stir fry - with anything I can find in the fridge or freezer. Dried noodles cooked and stirred into the sauce. Tofu or Quorn bits for protein.

Baked potato with beans or 0% Cottage Cheese

Love this: primula.co.uk/recipes/slimmers-nacho-style-feast/ with Quorn mince

Omelette or crustless quiche with loads of veg

Lentil or chickpea curry (using tinned pulses for ease). Tons of veg. Wholemeal rice. I like tomato based sauces - spices and a tin of tomatoes blitzed with a hand blender to make a sauce to stir into the other ingredients.

For when you are short on time the frozen meals from Iceland (they sell the slimming world brand ones) are surprisingly filling and good. Much nicer than most supermarket ready meals. Also Iceland do chicken kebabs that are usually 3 packs for £10. They take 14 minutes in the airfryer to cook. My go to lunch is 2 kebabs, cottage cheese, wholemeal pitta with cherry tomatoes.

There are loads of lovely recipes. Pinch of nom and the hairy dieters recipe books are all very SW friendly

You can also make tacos using lettuce leaves as wraps and stuff them with black beans, tofu, rice, and homemade mango or pineapple salsa.

If you want to keep things really healthy, organic natural foods like fresh veggies and beans are a great way to bulk up your meals without piling on the syns.

My go to meal is a stir fry. To mix it up I use different proteins and noodles sometimes rice noodles or egg noodles or different types of rice. Ive just made one for lunch took me 5 mins as I had to chop the veg while the noodles were soaking. As usual Ive made for too much so will be tomorrows tea.

Do you like spicy? The peri peri tray bake from the traybake book is gorgeous
we also as a family love to make chicken tikka kebabs on skewers and make dhal and serve with rice and raita, leaves lovely leftovers for a free lunch the next day too
