Breakfast help

Hi all, I need easy before work breakfast inspiration please.

I don’t like dairy (so no overnight oats etc).

I’ve been having poached egg on a piece of brown toast or fruit, also sometimes I have Weetabix.

Any ideas are welcome.

I make egg bites - you can make several in one go and then just grab out of fridge, heat or eat cold in the morning.

Crispbreads with cottage cheese tomato ham and lots of black pepper also tasty. Lose the cottage cheese and have avocado (count the syns).

hard boiled egg and beetroot salad.
apple and walnut salad
ham and pineapple with cucumber chunks.

Bacon or Sausage patty (5%pork) made ahead, then reheated in a bun with tomato slices.

I find chunks of finger foods handy- so fruit or salad with chunks of protein.

Do you also dislike milk substitutes and yoghurt? I make overnight oats every day for work but don't use cow's milk products.

I'm very into baked oats at the moment. So 40g of oats, yoghurt and egg (plus extra flavourings if you wish). Cooked in air fryer or oven. Topped with honey and fruits it's sooo good and filling.

I know that it contains dairy but because it's baked in maybe it wouldn't be such a problem?

I myself don’t really care for any breakfast foods that are healthy so instead I have a protein meal replacement shake.

Keeps me going until mid morning snack and is filled with lots of things I wouldn’t be getting from just skipping breakfast. Approx 200 calories. I use the Holland and Barrett choc flavour.

Thanks for the suggestions, I’ll eat egg but can’t stand yogurt (cooked or not), don’t like cheese etc.
I have no dairy at all except milk in tea and coffee. Would eat cheese on a pizza, that’s it.

Which sausages do you use @pickledandpuzzled ?

I have scrambled egg, SW sausage or sausage patty and baked beans. I like having a hot, non sweet breakfast and it keeps me going for most of the morning. I have breakfast about 6.30, then start to feel a bit peckish around 10.30-11 when I have fruit.

i don’t use milk in mine either. Usually I make them with eggs, Italian herbs, salt, pepper and then whatever veg and meat I have to hand. Ham, spring onions, tomato, mushroom and spinach etc

@Nikee20 just the 5% pork mince with seasoning, patted into little burgers. Cook and freeze. Whack in microwave and stick in a roll with speed.

I made a really nice frittata this week - v easy and quick to put together and lasts a few days in the fridge.

Fried a pack of pre-chopped chorizo with a big handful of frozen chopped onions, when cooked through add in 6 eggs (or however big you want to make it), a handful of grated cheese, some chilli flakes and some chopped frozen coriander. Cook on a low-ish heat so that the bottom sets but doesn't burn, then put the pan under the grill to cook the top.

It took me less than 15 mins to make one evening and it means I don't have to think of what to make in the mornings.

I have all sorts for my first meal, I do like yoghurt ( hm its so thick and creamy but not a SYN in sight ) so I do that that a lot, with oat bran instead of oats and fruit

Others are a fry - well air fry, but grill or oven works - mushrooms, tomatoes, eggs, bacon or turkey rashers, maybe a side of roasted veg to really fill me

Sometimes I make an omlette or scrambled eggs - if you can add some veg along with it - even better

I might just have a chopped salad and tinned fish or a chopped fruit salad - had that today - pears, satsumas, grapes, apple and kiwi, a handful of granola and a splash of orange juice - just a wee bit

I dont do cereals and prefer to hold fast on any bread. I am at target but I still keep an eye on my bread consumption, its a trigger for me

Banana, apple or a couple of hi fi bars for when I'm running out of the door without time to cook. Egg muffins if I've been organised. Sometimes dinner leftovers.

Recently I've been enjoying smoothies with frozen berries and flax seed - I do put greek yoghurt in mine but it would work with water or almond milk. Obviousy syn the berries but it's not high.

I have a friend who has defrosted frozen berries like a compote in the mornings.

I also buy a block of Lurpak garlic butter (could easily make your own) and keep it in the freezer. I sometimes chop off a slice and fry some mushrooms up in it for garlic mushrooms, they would go well with your poached egg if you wanted to save your bread for later on.

I make this in a square cake tin and cut it into portions and freeze.Take out the night before and defrost in fridge and then heat in the microwave when I want to eat it. I prefer spinach to peas but its good with broccoli as well.
