Potato recipes please!

My neighbour just gave me a HUGE sack of potatoes. I absolutely love jacket potatoes and have already made a vat of leek and potato soup for the week, also planning a roast on Sunday so will do some nice roasties.

What else can I do to get through them all?!

Children eat the same SW meals as us, so family friendly ideas are great, also batch cooks as we both work.

Would giant hasselbacks work, with a jacket-sized potato?!

There is a recipe for homity pie on the app that I want to try. Hasselback jackets sound great and I might try those - you could add some slices of cheddar from your Hex A in the “gaps” partway through cooking, top with tuna or baked beans.

Make and freeze mash / colcannon.
Par boil and freeze chips?

You should be able to keep the pots for a while in a cold area in a sack.

Oooh you need Boulangere Potato - basically like Dauphinoise but without the fat. Thinly slice potatoes (I don't even peel them but you can) layered in between thinly sliced onion, sprinkle with garlic, season well and pour over chicken stock to just about cover. Bake in the oven for about an hour, remove lid/foil and add HEX parmesan and bake until crisp. I could eat this as a meal with veg but it's great as a side dish.

Boulangere potatoes sound lovely. I really like Dauphinoise but never make them as I can't afford the Syns most days and anyway DH is lactose intolerant. Will try this.
