Vegetarian meals (no eggs)

Hi
I've started SW (again) and my mind is in the right place just don't want to get bored of eating the same old stuff, so can you please give me your vegetarian meals that don't have egg in please?

Pasta invisibly but trying to limit it to twice a week , if I make a sauce once a week then I will have that a couple of times. Don't like soup. Any ideas? Thanks

I would try the green roasting tin book op. Loads of ideas in there and I imagine most of the ingredients are 'free' as unprocessed and fresh

Peppers stuffed with a mix of finely diced and fried courgette, red onion, mushroom with cooked brown rice, petit pois, some herbs and a little tomato paste. Grate a bit of cheese on top if you like. Bake for about 30 mins. Delicious.

Summer salad: romaine lettuce, watermelon, cucumber, tomatoes, mint, half fat feta cheese, black olives. Serve with baked potato wedges tossed in rosemary, salt, chilli flakes and garlic granules if you want to add some bulk.

I don’t know SW personally (just saw this pop up in active) but we do a chickpea curry which is basically any veg knocking about with spices and tinned tomatoes. Very low calorie and tasty. I tend to do carrots, celery, garlic a couple of peppers, the chickpeas, harissa spice mix with added cumin and paprika, tin of toms, cook it down as long as possible. I don’t eat onions so I skip those, sometimes bung in spinach if we have it but it needs to go in late. We have it with pitas, and it’s good as a cold lunch the next day.

Again, not sure how this works with SW, but veggie sausage/roasted veg traybake is another easy favourite here. Peppers, tomatoes, garlic, courgettes (no onion for me), chickpeas, could pop in some potatoes even. I tend to crumble over some feta just before serving.

Probably no use but risottos are a good way of getting the veg in, and we probably have that once a fortnight.

(neither veggie nor dieting so feel free to tell me to shut up, we just try to do at least two meat free days a week.)

Pasta with lentil/bean and tomato sauce
Vegetable and chickpea curry and rice
Stir-fry with tofu or tempeh and rice or noodles
Salad with edamame
Baked beans and baked potato
Kale, mushroom and chickpea pasta
Refried beans, salsa, sweetcorn and rice with salad
Veg chilli with beans and lentils or tempeh, and rice
Veg paella with green peas and beans

Some great suggestions here. Stir fry is one my go-to dishes and is a great way of using up stray veg. Love tofu (especially really firm like ToFoo brand or cheaper equivalents from my local Chinese supermarket).

One of my weekly staples is baked potato with fat free cottage cheese and tons of yummy salad (and pickled onions!)

Hi @Cabello - I only have the old green/red books from way back, but at that time avocado had to be syn'd (9.5 syns!). Is that still the case?

@JoelDommettsTux SW do a Veggie Deluxe cookery book - loads of recipes in there without egg.

Or alternatively use the app and look for veggie recipes - there are loads. Just ignore the egg ones.

Your consultant must be crap if they've not explained this (or tried to flog you the books along with those god awful bars) 😂😂😂
