We've got friends coming for dinner next week any suggestions for what I can make?

I'm generally not a fan of slimming world meals (yogurt curries, too watery, sweeteners etc) so just after a nice mainstream meal that is relatively low syn.
Any ideas?

Chicken casserole? Chicken breasts slow cooked in stock with carrots, onions, leeks and mushrooms. Serve with jacket potatoes - everyone else can have lots of butter with green veg on the side.

Or, do the same with lamb - slow cook with vegs in beef stock with tomato puree and worcestershire sauce. Par boil some thinly sliced potatoes then lay on top 45 mins before the end and place them slightly overlapping on top with a good spray of frylight. Lamb hot pot. Yum.

Ah apologies failed to include that all important extra that one of the guests is pescatarian! (But you have given me an idea for dinner tonight so not totally wasted Grin)

Salmon would be my go to. Cook topped with pesto, parmesan and breadcrumbs, using hexb and a. There's a good Delia recipe which always seems to impress guests. Serve with asparagus and rice or potatoes.

I think pudding will be your difficulty.

Maybe a deconstructed Elton Mess, i.e. fresh fruit, meringues and optional cream. Either leave out the cream for yourself or have a little, enjoy it and count the Syns.

That salmon sounds lovely thank you and I'm ok at making meringue so that's a good shout too.

Thank you Thanks

Mushroom risotto- elevate it by adding truffle oil

sageandbasil · 13/02/2022 21:20

Eton mess is a great idea. 2.5 syns per nest!

lechatnoir · 15/02/2022 13:26

Thanks - not doing it for our dinner party but thanks for the mushroom risotto suggestion @sageandbasil it's gone on my menu plan for the week

"Grilled chicken with tikka spice. Marinate chicken breast in FF yogurt and tikka and Lemon juice and grill and that makes a nice starter - can also add some vegetables like onions and courgettes"

I belive the above mentioned idea is useful for you.
