Breakfast Banana pancakes

I was very excited to have a new option for breakfast when I found syn free banana 'pancakes' but made them this morning and they were so disgusting I couldn't eat them --which is really saying something!

Are they truly vile or did I just do something wrong & should try again? I used 2 eggs, 2 mashed bananas and a teaspoon of bicarbonate of soda, fried in spray and served with mixed berries.

Vile. Sack of slimming world and have a pancake. Bananas are calorific anyway.

What if you made it with beaten egg whites so it was a bit more soufflé-ish?

That’s lots of bicarbonate which will give a very chemically taste!! No wonder they were horrid. Usually bicarbonate is added in much smaller amounts and to recipes with flour in….I would definitely leave it out.

Even baking powder would add a horrible taste. I usually add baking powder to my pancakes - anywhere up to to a tablespoon is typical for fluffy American style pancakes but that would be with at least 130g of flour.

Vanilla essence would be good added to the recipe. Leaving out the bicarbonate would make them taste much better.

Definitely the bicarbonate that did it. I may give them one more try with a pinch of baking powder instead plus some vanilla essence but think I'll be safer synning some flour and making normal ones.

I've made these before, took a couple of attempts to get the right taste. No bicarbonate, I add a little bit of vanilla and I also use slightly less egg. Maybe try less egg or less banana and see if you prefer them

Just mash one banana, with one egg and mix/ beat it together, fry as if it’s a pancake and serve with lemon and tiny bit of sugar, and it’s really nice. One egg only though. Blueberries added in too are lovely
