What do you all have for lunch that doesn’t use too many syns or healthy extras? I eat anything and everything (hence why I’m a bit fat haha!)

Omelette, jacket potato or home made oven chips (using Frylight) with baked beans or salad 🙂 Sometimes home made soup but it always makes me want bread 😊

hollyhope · 29/12/2020 19:54

Is this at home or at work, OP?

Soups, big bowl of chunky veg soup with lentils/Pearl barley/other pulses.
Pasta salad with just lemon juice squeezed over
Rice salad same as above.
Left overs from the night before, pasta bake/stir fry

This is not slimming world but one of my own lunches I make and it's still low fat and low sugar. It's 30g of pasta, white or wholewheat, 15g of feta crumbled, a sprinkling of pine nuts, babyleaf spinach, some chopped cucumber, some chopped avocado and 4-5 cherry tomatoes halved. You only have to cook the pasta. Just mix it all together with some low fat salad dressing and you can have 1 small fillet of fish or chicken with it

leah1991 · 10/02/2021 17:08

Also not slimming world. Cube up half a potato, microwave it to soften it, let cool for a few minutes to harden a little and fry in a little olive oil or frylight until looking golden, fry some onion, pepper and green beans with it. Edamame beans and pine nuts also make a nice addition to this. You can also add 15g of a low fat cheese to this too, I love feta. Use whatever seasonings or dressing you like on it

Omelette made with 2 or 3 eggs, filled with 4 birds eye green cuisine sweet potato and carrot bites. You can also spread a little tomato puree or sauce in and chuck in 2 dairylee light cheese triangles if you want to

leah1991 · 10/02/2021 17:15

These are not slimming world but I guarantee you they are all low fat and low sugar.

Mini naan pizza: toast 1 sharwoods mini low fat naan bread and top with a little tomato puree, sprinkle a little low fat cheese on top and add whatever veg and wop under the grill. Have salad on the side

Chickpea patties, makes about 4: into a good processor chuck a 15 ounce can of chickpeas, half a red onion, 2 garlic cloves (optional), 2 tablespoons tomato puree or 3 sun-dried tomatoes, half a cup of fresh parsley or dried in a pot, 1 teaspoon cumin, 1 teaspoon corriander, 1 teaspoon salt, half a cup of flour and 2 tablespoons olive oil.
Just whizz this all together until smooth, shape into 4 patties and to cook you can either fry for 3 minutes on each side or bake in the oven for 20 minutes. They come out a little dryer in the oven. Put 1 in a large spinach tortilla and add some guacamole, a little tomato salsa and a little salad, all in the right proportions so you can still wrap the tortilla up.

I make a lot of soups which are all or mostly speed. Some of my favourites are;

Roasted tomato, pepper and garlic
Pumpkin
Pumpkin and cauliflower
Carrot and butterbean
Lentil with onions and carrots
Leek and potato
Spiced split pea

Alternatively I have 2 slices of wholemeal bread with some protein such as ham, smoked salmon, hard boiled egg, tuna, with a big salad of speed veg, so combinations of lettuce, red cabbage, spinach; rocket, carrot, celery, pepper, cucumber, radish, spring onion, red onion and cold cooked leftover veg like squash, pumpkin, carrot, celeriac, fennel, asparagus, aubergine etc

Sometimes I have leftovers from dinner the evening before, which could be curry, pasta and sauce, risotto etc.

Basically I try to eat as much veg as possible!
