Jacket potato with fat free cottage cheese/chickpea dahl/baked beans/ratatouille/tuna (it doesn’t have to be with mayonnaise you could add some fat-free fromage frais to stop it being too dry)

What kind of things do you usually like? What would lunch be ordinarily?

I really struggled with lunches at first as I am quite particular in my likes and dislikes!

Twiglet2353 · 28/07/2020 17:13

@ThisMustBeMyDream usually a sandwich and crisps to be honest!

Okay, well lunches I do depend on my work days and any other events.
Tomorrow I am visiting my mother. I'm taking a chicken salad with me. I use baby leaf lettuce, romaine tomatoes, cucumber, red onion and then either chicken breast or if I want to use a syn I quite like the taste Inc spicy chicken fillets as they very flavoursome. I then drizzle some balsamic glaze on for 1 syn. I bought a sistema salad box which helps keep the salad leaves fresh and then mix all the salad come lunch time.
I also make a variety of soups. Current favourite is a tomato and basil SW recipe one. I have a few recipes which are all veggie if you like soup. I bought an extra wide flask so I can eat soup on the go. I'm a community midwife so lunch is mostly from my car.
On my non work days I might have some of the soup, sometimes if I'm prepared I'll do a jacket potato and use my cheese allowance. I like mine with sweetcorn and red onion on top, and a side serving of cucumber and tomato.
I also bought some poacher microwave thingies which can do both poached eggs and mini omelette type things.
I'll attach a few pictures for you of my lunches and you might get some ideas. If you want any recipes, just ask Smile.

Sometimes I'll take crisps with my salad too if I think I might be tempted by other things there.

@ThisMustBeMyDream oooh that chicken looks lovely. Is Spice Inc an online brand or something I could pick up in the supermarket?

Also, coincidentally, I'm a CMW too!

Ooooh! How funny! I've only been out a year, after moving trusts to go to community. Being prepared is the only way I can manage with losing weight and being a midwife! The perks to community is generally speaking, I can squeeze lunch in! The downside is the amount of Mcdonald drive throws I pass in one day 🤣.
The brand is taste inc. They do them in most supermarkets, but the only one here that does the spice one is Sainsburys. I try not to use them as they are 0.5 syns each, but I find they add a good kick to the salad. That along with the balsamic glaze makes it taste lovely. I also added some pomegranate seeds this last week which also went well!

I have my wholemeal roll from hex b and cheese from hex a and cucumber . I have random fruit or veg as a side .

Blondeshavemorefun · 29/07/2020 23:04

Jackets if home

Or salad and ham /tuna

Cold pesto (Tbsp 3) pasta with chopped toms onions pepper and chunks of chicken is nice and filling

Debtgalore · 01/08/2020 17:52

Following with interest as lunch is my downfall

ThisMustBeMyDream · 02/08/2020 00:11

I made this frittata yesterday. It was from the sw website, I ate it hot, and it wasn't too bad. Then today, I ate the other one I'd made cold, and it was delicious!
It was called ratatouille frittata on the website.
I'll be making a big one of these this week to take to work!

Bl0ndi3 · 02/08/2020 19:36

For lunch I usually:

Batch cook soup for the week
Tinned soup (Heinz ones are largely low syns)
Jacket potatoes and usually batch cook these so I just have to reheat with filling which is usually cheese and beans to be honest.
Salads
Pasta and sauce or mugshot with a salad
Leftovers

I struggle with lunches too if I don't have any leftovers but I'm going to try and make a conscious effort with them as I don't have breakfast usually

ThisMustBeMyDream · 02/08/2020 20:24

How do the reheated baked potatoes go? I'm a bit funny with textures. I need a good crispy shell on my potato to feel satisfied! Does it heat up as crispy? I'd be well in to that if it works!

Bl0ndi3 · 02/08/2020 21:02

Mine have been okay but I must admit I'm not fussy about crisp skin I'm more about the super soft potato insides haha but I would imagine it would reheat crispy if you reheated it in the oven instead of a microwave or did microwave then crisp on high in oven or something for speed x

@ThisMustBeMyDream

Bl0ndi3 · 02/08/2020 21:03

Sorry i also reheat it separate to cooking whatever filling I'm having I didn't make that bit clear haha x
