Making eggs taste better

My DH and I are struggling for lunches.
Our 'go to' is either jacket potatoes or eggs.
I like eggs, but they get pretty boring in an omelette or Fritata. I put ham, mushrooms etc in but how can I spice it up? X

I find 10g of cheese from my allowance helps with black pepper. I often have scrambled egg with ham and spring onion for my breakfast.

I like to make egg muffins too. I mix up 6 eggs, fill a 6 muffin tin with ham, spring onion, mushrooms, spinach, tomatoes, some cheese. Then pour the mixed egg with some black pepper over and bake at 170 for 30 mins. I like them cold.

I came on to say SW egg muffins: you can put what you like in them.
I blend in some cottage cheese with the eggs, too: you could use a flavoured one, eg chive flavour.
Can easily be made SP as a bonus.

Cheats shakshuka - tin of ratatouille in a frying pan with some garlic and chilli, cook it till it’s thicker, make 4 wells in the ratatouille, crack an egg in each, then carry on cooking till the eggs are done (might need a lid to steam-cook the yolks)

I fry a small amount chopped onion, bacon and mushrooms in frylight.
Put a little in each section of a silicone muffin tray.
Blend a small tub of cottage cheese with 4 eggs and add to muffin tin.
Bake for 30 to 40 mins, gas 6.
Leave in tray for a few mins before turning out onto a tray to cool.
No need to use cases.
Nice hot or cold and can be frozen.
I think they make a nice SP breakfast, and it saves using a B choice on cereal, etc.

Hey thanks.

I'm doing good. They moved it forward to half seven yesterday morning so I was home by 12:30.

Feel ok, in a tiny bit of pain and a bit stiff but otherwise all good 

Feel so happy I could cry I'm really happy with the results.

Spent last two days binging on box sets.

This is a nice recipe and I made it the other nice and used a mullerlight whipped strawberry yoghurt for the filling.

My shakshuka recipies is onion, garlic and tomato with cumin seeds and smoked paprika. Add fresh spinach and wilt down. Make a well in the mix, crack eggs and cook down. I eat this all the time, its sooo tasty.

Thank you everyone. I'm really sorry that I forgot to add that I can only eat eggs mixed ie scrambled or omelette. I don't like the yellow of an egg on its own! X

Egg wraps. Beat an egg and pour into a large frying pan so it makes a very thin layer (thinner than for an omelette) and then turn the heat down to low and let it cook for about 5 mins until set, then flip and cook the other side for about a minute. Use instead of tortillas etc. To make wraps/sandwiches with whatever fillings you like. Great hot or cold. Cold i like ham, salad and mustard.
